It was too hot to cook and we weren’t all that hungry. A cold beer felt like the answer. Opened the refrigerator and Ginny saw the Bloody Mary mix. “If we have a Bloody Mary it will be like we’re eating vegetables.” No argument from me.
I place the mix on the counter next to some cucumbers that had just been picked. Looking at the counter and the ingredients we both said in unison, “Gazpacho!” We exchanged the cucumbers on the counter with 2 cold cucumbers that had been picked yesterday. The mix we used was Master of Mixes Loaded. The ingredients read like a gazpacho recipe and seemed perfect.
• Peel, seed and cube 2 medium cold cucumbers
• Slice 2-3 scallions using white and green parts.
• Put in a blender
• Add enough Bloody Mary mix to cover and puree for about one minute.
• Pour into a cup and sprinkle some crushed corn chips on top.
