What do you do with pine nuts left over after making lots of pesto? How about a pie made with toasted pine nuts, honey, sorghum and a shot of Jack Daniels? A tasty variation on the basic pecan pie.
Bought a LARGE Pecan Pie at Costco yesterday because they don’t make small pies. Ginny has been trying to figure out a way to eat part of it so guest won’t notice on Thanksgiving. “Cut out the middle and put it into the a smaller pie shell,” she says. So I made this pie with Pine Nuts, honey, sorghum and a little Jack Daniels. This recipe doesn’t use corn syrup. The sorghum and Jack Daniels give it a distinctive Southern taste. I think I used too many pine nuts. Will adjust and then post recipe.
